2 x 60-90g Rainbow Trout Fillets
Rainbow trout, farmed in cold chalk streams by our friends at their trout farm in Wiltshire.
This trout is so good, just baked simply is all that’s needed. Season the fish both sizes.
Brush a baking dish with olive oil, then add the trout skin side down, sprinkle with some chopped herbs. Cook uncovered for 10 - 12 minutes until opaque and flaky. To serve, top with a squeeze of lemon juice and some capers. Superb!
